Forgive me if this is a no-brainer, but I found that I can add more icons to the start menu by using Explore from Activesync on my desktop, and then adding the shortcuts to the windows/StartMenu folder. This way I was able to get around the limit of 7 icons that the system gives you when you try to do so through system/today screen.

In addition to modifying the start menu, I go into the Programs sub folder and group my programs by placing icons in group folders, similar to how it was done in Windows 3.1. For example, I have folders created for Pocket MS Office, Doc Readers, calculators, system utilities, etc. This really eliminates the screen clutter!

You can also create cascading menus on the start menu by copying and pasting these group folders into the start menu.
