I have got a Psion modem type: Gold Card WAN Global 56K + Fax, with no manuals. I have looked at the S7 manual with general help on how to install, but can neither get on the net or get the comms command software to test the modem.
Any ideas on control panel setup for this model, or where I may find this info.

This document from Psion is quite old but should give you the basics:
This document describes the procedure for installing and connecting a Gold Card Global PC Card modem on the Psion Series 7 .
Requirements
To successfully complete the installation procedure you will need the following:
Gold Card Global PC Card modem
Psion Series 7
Internet account details
Procedure
Insert your Gold Card into the Psion and click the System icon (bottom left of the screen).
Press CTL+L or press the Menu key and choose Tools menu and Link to Desktop... and ensure that OFF is selected.
Open Control Panel and Modems. Select 'Current modem' and choose 'Psion Connect Modem'.
Click on the Edit button (CTRL+E) and setup your modem as follows:
Modem :
Name :................ Psion Connect Modem
Speed :............... 57600 baud
Connect via :......... PC Card
Fax Class : .......... Auto
Initialisation :
Init. (reset )String :........AT&F+MS=11 or at&f ( Gold Card GSM )
Advanced :
Flow control :................... Hardware (RTS/CTS)
Terminal detect (DSR/DTR)............. ON
Carrier detect ( DCD )........... ON
Modem type :..................... Fixed Line
Click OK when you have done setting up the modem and click OK to save the settings.
Setup Your Internet Connection
From the System screen open Control Panel and double-click the Modems icon and confirm that the current modem is set to 'Psion Connect Modem'.
In Control Panel double-click the Internet icon.
Click the New button to create a new internet connection.
Select Standard settings and click OK.
Click the Service tab enter the name and telephone number of your Internet Service Provider (ISP).
Click on the Account tab.
Remove the tick from 'Manual login' and enter your username and password giving to you by your ISP.
Leave all the others settings as default. Click on Done and OK.
You can now connect to the Internet using the Psion web browser and email packages.
Note: The maximum connection speed for PC Card modems on the Series 7 is 33,600 bps.

Solution
Insert the Gold Card in the Psion Series 7 / NetBook
From the system menu open the 'comms' icon.
Start the Comms program and click on Setup on the left hand side of the screen.
On the settings tab : ensure that the 'Use com port' is 'PC Card' and the 'Baud Rate' is set to '57600'
Leave everything else as default
On the handshaking tab : Ensure that XON/XOFF is not ticked, RTS/CTS and DSR/DTR must be ticked and DCD must not be ticked
Click OK to set.
On the blank terminal screen type ate1 and press Enter. Note: The characters may appear double on the screen, this is normal.
The modem should respond with OK.
If you see the response OK then your modem is correctly installed.
To test dialling, connect the modem to the phone line and type atdt <phone number> and Enter. (Note : Do not add any spaces between the letters and the numbers)
The modem should dial and connect to the remote modem. Note: If you dial an ISP you may see a login prompt but after logging in you will most likely be disconnected. If the modem does not connect click here.

I was interested to see in the material from the Psion web site which Mike McC posted in his reply that a PC card modem won't run any faster than 33k6 in the Series 7; I had been using a V.34 Gold Card, but swapped it out for a V.90 Gold Card, thinking it would give me a bit faster download speed, but it looks as though I was wasting my time...

Despite this info from Psion, I maintain that since the logs posted in that thread quote higher download rates attained with a V.90 modem, that 33.6K is instead all that Psion will guarantee, not a hard limit.
In a similar way, Psion said that pre-revision 10 motherboards could not supply enough current to power GPRS PC cards, yet more than one person has posted that they have had no trouble with a GPRS card in a revision 7 motherboard. Psion just have to protect themselves; its the same as quoting a 'minimum hardware specification' when selling a piece of software.
N.B. Note these are netBook board revisions - the '7' has nothing to do with Series 7; I am not suggesting that a GPRS card will work in a Series 7!

Looking at my logs over a fews days, I was disappointed to see that my 7book appears to only attain 33.6Kbps using my Psion Dacom 56k+Fax PCMCIA card:
28800:TX
/33600:RX
I may try switching back to my Option 33K card modem, as that doesn't have stupidly small dodgy connector (slightly moving the connector on my Gold card causes noise and/or complete loss of connection - even after replacing the cable!).
Whereas Andy Ahern has seen better speeds (see http://www.pdastreet.com/forums/showthread.php?s=&threadid=13968) with a Series 7 and a 56K card. Just goes to prove my point - some mboards can do better than others unfortunately.

Who is your ISP. I know that my ISP (Tiscali, previously Lineone & Psion.net) are having problems at the moment and I can only connect at a maximum of 33.6kbs on both my 7book and laptop. I was connecting at 50kbs yesterday using, like you, a Dacom 56k card in a 7book
Check with your ISP or try dialling in using a PC using the same phone line (doesn't have to be the same modem). You may also have a problem with your phoneline.
All worth checking if you are used to faster speeds (assuming you previously were able to connect above 33.6)

Interesting article although I am sure the screenshots are taken from a netbook. There is definitely an ethernet option on the control panel. Unless, of course, the ethernet add-in drivers available for the previous netBook OS were also installable on the 7?
