I'd like to understand the limitations of using these units if you move from one employer to another (assuming that each employer supports the BB enterprise).

I believe I understand that the redirect option is always available, assuming that you have the software and leave your machine up all the time. That said...

With regard to the enterprise edition. What goes into changing a BB from one employer to another employer? Is this software on the BB or something on the server? How do you tie it all together? Or can this be done? Are each enterprise unit proprietary to the enterprise server it was originally intended to be used on?

I do know that the BES software is not transferrable from one company to another legally.

I have been using the Desktop Redirector(instead of the BES) for over 2 years with no problems. Other than the fact that I must leave my desktop on all the time its not a hassle.

I have the issue as well that I have changed employers, but in my case from one that supported BB, to one that (so far) does not. Is there any way I can arrange for individual service, and forward my messages from my new firm email (Microsoft outlook)? HELP!!

Just use the Desktop Redirector to send your mail out. It functions similarly to a BlackBerry Server. The only thing is to ensure that you are using the device in an Exchange or Domino environment.
