Ok, so here's my current setup:
(1) iBook 800MHz (w/USB ports) w/OS X
(2) Virtual PC installed with Windows 2k
(3) Garmin iQue
(4) USB/IRDA adapter
This plugs into your USB port and turns it into an infrafred port just like what's on the iQue.
This adapter lets you "beam" anything you want between the iQue and your PC, and you can even "hotsynch."
With this setup, you should be able to get through all of the initial installlation steps up to but not including the detailed maps install. Just make sure to indicate you want to transfer via "infrared" or "IR" on both the hotsync app on the PC and on the iQue, and don't even bother with the hotsync cradle at all.
Some important notes:
(1) Syncing will be SLOW! VEEERRY SLOW. You will probably want to plug in the iQue during synch because it will take hours the first time you do so.
(2) I've discovered that you can't sync maps to the SD card using this method -- something about the IR is not allowing it. (At the end the log reports an error 4004 or something like that. I tried on two different SD cards to make sure it wasn't the card)
(3) You CAN sync detailed maps to the internal memory using this method, but the amount of memory available is very constrained.
(4) To work around the issue (2), I am planning on loading maps (generated via map-install tool without actually "hotsynching" them) to the SD card using an external reader/writer. Someone told me in another thread that the SD card will have a "GARMIN" directory at the top level, and all that needs to be done is to place the map inside that directory. When I try this out I'll report back.
By the way, I got the USB to IR adapter from outpost. Right now you can even get it for FREE after rebate! :D Here's the link:

Good look to all and I hope this information helps others pursue our collective dream of being able to own both a Mac and an iQue without one being a paperweight. :)
