Do I need only a cable? If so, which cable? Do I also need to buy a modem? And is the software which comes with the Palm III enough?

I've been surfing the net for over an hour and am getting contradictory messages.

I'm am not aware of any cables that can help you with the III series Palm. The only option for the III series is a wire modem. They show up on eaby once in a while. Sorry.
There are cables for the Pam V/Vx and the newer universal connectors found on the 500 series and the 130/125.
