Can you set up directories on a SD Flash memory card? It would certainly be useful if at all possible!

Yes, you can. There is a freeware program called Filez that lets you set up directories. It will also move or copy programs from RAM to the card (any directory on the card) and from card to RAM, and even from one directory on the card to another.

Keep in mind that the Palm launcher will only look in the "root directory" of the card for apps; however, some programs which are capable of reading files from the card need to have those files installed in specific directories. An example is FireViewer, which will read image files in the directory /Palm/Programs/FireViewer and any subdirectory of that. (FireViewer treats subdirectories kind of like categories.)

The built-in app launcher looks in /Palm/Launcher, so put any programs you intend to run from the card in there.
