I HATE OUTLOOK!
I really, Really, REALLY HATE Outlook!
Is there any other PIM that will work with the M5? If so, which and how do you sync with it? I assume that ActiveSynce only speaks with Outlook. Will IntelliSync speak with other, more rational/functional PIM applications?

Yes, Intellisync will run with Activesync and let you sync with other popular mail and PIM suite, more details are here

As a long time PALM user, I had a hard time adjusting to the Outlook desktop features. The Palm Desktop was so much easier to use. But with the Garmin M5, to get the most out of the GPS's address indexing/lookup as well as catagory integration I think the Outlook PIM works better. In other words, if you want full function out of your M5's GPS (if thats what you have) use Outlook.
If not, another way around it, is to use palm desktop for PC data entry then use "resync" to sync your Palm desktop data with Outlook. Then sync to your PPC w/Outlook. I know its an extra step, but then you have the functonality of using all the data fields of Outlook, and still having the Palm simplicity.

I have tried it and it sync'd fine! The only issues was that some of my calender events in Palm (Datebook5) had unknonwn coded data in the note field. Later I figured out that it was for repeating events. The tasks showed up in Outlook as it should (repeating) but just had a bunch of "&^#%%$@####" in the note field. Solution? just delete the "&^%$#####". All's good.

Good point about M5 functionality and Outlook. In fact, to some extent, I like Outlook as a PIM. I hate it as an e-mail client. I may go back to Eudora or Thunderbird for email and just use outlook to manage my calendar, contacts and tasks.
