Currently evaluating a RIM857... vs. my Palm i705
1. No way to set your own "Reply To:" address in the email.
2. No way to disable the creation and saving of "Sent" messages.
3. No folders for message storage.
To balance though... I love the thumbwheel!

Don't forget that great thumb keyboard (http://www.pdastreet.com/forums/showthread.php?s=&threadid=6167) too. Once you get familiar with the Blackberry keyboard, you'll find it hard to stay with the i705.
There's actually a third party way to get email folders on your Blackberry! -- it's called Sparrow (download from rimroad (http://www.rimroad.com/software/rim1/Sparrow-Email-2001-5-16-rim-rim1.html)). (download from author website - newer version (http://rallypilot.sourceforge.net/bb/)) .... It's actually a third party email application for your Blackberry that you use instead of the Blackberry's message application.
Did you know you can compose multiple messages at a time while you're out of coverage and "send" them? Now keep carrying your pager and they automatically get sent when you get back in coverage! There's just simply no "checkmarks" next to the messages until they've been sent.
Don't know about the ability to add Reply-To, unfortunately. Something you may have to live without.

By the way, if you want to use AIM, ICQ, MSN on either of your i705 or Blackberry 857, there is WebMessenger at http://www.webmessenger.com .... It's a lot more fun with the Blackberry, though!

Yep, get Sparrow. It's indespensable. Not only can you have multiple folders, but you can also use multiple email addresses (and even change your address in the Blackberry at will). I forwarded 5 accounts and had filtered folders for each (with different ring tones for each). ALthough it works, it IS a bit of a pain to change the "from" address if you do it frequently or often, otherwise it's pretty good!
To do this, you need Sparrow, and procmail filters on a Unix mail server. (For Windows/Exchange, it might be different)
I have scripts to do it, but if you visit the Sparrow homepage (go to google, search "sparrow blackberry") all you need should be presented there. See the Sparroq FAQ.

** The reply to address is the same as your reply to address that the BlackBerry is setup to work with. You can change it to whatever you want.
2. No way to disable the creation and saving of "Sent" messages.
**On the Redirector Settings' Advanced tab you can disable the saving of sent messages.
3. No folders for message storage.
**The new software allows you to view your entire inbox folder list as well as specified PST files so you can file them anywhere you wish.

1. I don't use the redirector program, just a Blackberry 857. Is there still a way to disable "Sent" messages on it?
2. Is there a way to change the "from" address on just the Blackberry? Again, I am not using the desktop program to forward messages. I forward messages from my exchange server using a server rule.
3. What is this new program? Do I download it to my Blackberry?

You are using the Internet Edition with your Exchange server which will severely limit what you can do with your device.
To change the "from" you would need to log in to your IE account web acount and set that there, it varies per IE account so you may need to contact your service provider for more indepth instructions.
To disable the showing of sent items, you can filter them in messages. With your messages open hold down the "alt" key (orange key), then press "I". This shows only incoming messages.
The filing of messages to subfolders will not work with your IE device. Basically the BlackBerry works off the internet account that your mail is forwarded to and has no idea you even have an exchange server so it can't file to its folders.
